Mum's Proper Gravy

When you remove your roast or chicken from the roasting dish, scrape all the lovely bits of meat and juice into a saucepan, add some flour to this to soak up all the juice as if making a white sauce.

Add salt and pepper, a little gravy browning and water – add this (water) slowly and mix constantly till all the flour has been soaked up.

Place on the gas ring and cook slowly, adding more water if it seems to be getting too thick – you just want a pouring consistency.

It only needs to come to the boil, then remove and keep warm till you are ready to serve – and there you have it, Mum’s proper gravy!
