Annaharvey Farm Roast Duck with Sweet Pepper Sauce

Use one half duck, sprinkle with a little salt and place on a roasting dish – place in hot oven for approx. 45 – 50 mins

Slice a red and yellow pepper along with 1 large red onion and cook in a pan with a little olive oil for about 5 mins. then add 2 tablespoons of honey and cook slowly for approx 20 mins till soft and "gooey"

Remove duck from the oven and place on kitchen paper to absorb any grease – then place on a serving dish and pour the sweet pepper sauce over it and serve.

A half duck can sometimes be enough for 2 persons if large enough. This is a dish we serve with lovely fluffy mashed potatoes and mange tout peas – all you need now is a glass of red wine and your in business!
