Brie in Puff Pastry:

At Christmas I always feel it is important to make things as easy as possible for dinner, so here is a quick and easy starter that can be got ready the day before and just popped in the oven before serving.

1 packet of frozen Puff Pastry defrosted.
Brie cheese.
1 egg.
Cranberry sauce.
Mixed salad.

Roll out the pastry and cut into rounds approx 3" in circumference.

Brush the edges with egg and place a spoonful of Cranberry sauce in the centre, followed by a portion of brie cheese.

Top with another round of pastry and using a fork press down the edges firmly, brush with egg and place in the fridge till ready to cook and serve – takes approx. 10–15 minutes in a moderate oven.

Serve with a mixed green salad, some nice dressing, and a bit of cranberry on the side.
