Annaharvey Farm Potato Cakes.
These are a real favourite with both family and guests, and are a great way to use up left over spuds!
All you need is approx 6 –8 cooked potatoes peeled – I put them through an old fashioned implement called a "ricer" it basically squeezes the potato but can also be done with a good masher.
Add salt and pepper, a little Tabasco, mustard and pesto and some dried herbs if you like. In the meantime grill some bacon till crispy, and sauté some onions on the pan – add to the mashed spud along with 2 eggs and mix – add 2–3 tablespoons of flour to dry up the ingredients so that the mixture holds together nicely in a ball. Roll out on your chopping board and use a scone cutter to cut into nice shapes and fry on the pan for a few minutes each side – place in the oven to keep warm. Be careful to have the pan warm but not very hot as the cakes burn easily and are only meant to be golden brown when cooked.
Serve with a green salad and chutney, along with some Annaharvey brown bread, and a glass of red wine for lunch!
