Rhubarb and Banana Crumble
Here at Annaharvey we like to use food that is in season and rhubarb certainly fits into that category. This is the easiest plant to grow – all you need is a friend willing to give you a "stool" of rhubarb which you plant in the ground, plenty of horse manure and away you go!
1 lb Rhubarb washed and chopped into large chunks
4 ounces caster sugar
3 large sliced bananas cut into chunks
Lemon juice
8 ounces plain flour
4 ounces butter
8 ounces brown sugar
1 tsp ground cinnamon
Custard to serve
Place rhubarb, sugar and 2 Tbsp of water in a pan and cook for a few minutes till it softens.
Toss the banana slices in lemon juice and mix in with rhubarb.
Rub the flour, sugar and butter together till like coarse breadcrumbs, add cinnamon.
Place a little of the crumble in the base of a greased oven proof dish, pour rhubarb mixture over and place the remainder of the crumble on top. Bake in a pre heated oven approx 180.C or gas 5/6 – reduce heat if you think the crumble is getting too brown, it should be a lovely golden colour.
