Annaharvey Beef Burgers
We source our beef from Farm Factory Direct – it will come as no surprise to you to know that this business is run by Margaret and Ivor – wait for it – Deverell !! Yes we keep it all in the family where possible – Ivor along with Margaret (his Mum) and Joe (his uncle) run a very successful Beef and Tillage farm, specialising in Hereford Cattle which produce an excellent tasty meat, with just the right amount of fat to make the food succulent and mouth wateringly edible.
You will need approx 1lb of minced beef per 3 burgers.
1 chopped onion
1 egg
1 teaspoon mustard
1 teaspoon horseradish sauce
1 teaspoon pesto
Worcestershire sauce
Soya sauce
Salt and pepper
1 grated clove of garlic
A little ground ginger
Mix all the ingredients together and form the burgers into rounds – roll in flour or breadcrumbs and flatten to approx 1/4" – if you leave them too thick it is hard to cook them through.
Heat a heavy based pan with olive oil, and fry the burgers on both sides – when we are cooking for a lot of guests, we brown them on the pan and then finish cooking them in the oven, which speeds up the process.
Serve with deep fried wedges, or leftover cooked potatoes sliced and fried on the pan –a green salad with lovely dressing, some nice chutney and a glass of red wine – what more could you ask for!
