Chicken Fillets in Creamy Sauce
2 chicken fillets
1 carton of cream
1 teasp pesto
2 spring onions/1 small red onion
salt and pepper
1 clove of garlic
Heat some extra virgin olive oil in a heavy based pan
Flatten the chicken fillets and fry on the pan, browning on both sides – remove and place in oven in oven proof dish
Meanwhile chop the spring onions small and add a little more olive oil to the pan and cook them slowly, add the crushed garlic clove.
Pour the cream into the pan, add the teasp of pesto, and season to taste – cook slowly till the cream thickens, pour over the chicken fillets and serve with creamy mashed potatoes and roasted mix vegetables.
